  • 1/2 cup tapioca flour (approx. 200 kcal)
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups coconut milk or any non-dairy milk (approx. 384 kcal)
  • 1/4 cup melted coconut oil or vegetable oil (approx. 480 kcal)
  • 1 teaspoon vanilla extract

Cooking Steps:

Step 1: Preheat your waffle iron according to the manufacturer's instructions.

Step 2: In a large bowl, whisk together sweet rice flour, tapioca flour, sugar, baking powder, and salt.

Step 3: In a separate bowl, whisk together eggs, coconut milk, melted coconut oil, and vanilla extract.
