Ingredients:

  • 4 large russet potatoes, washed and peeled
  • 2 cups vegetable oil for frying
  • Salt to taste
  • Optional seasonings: paprika, garlic powder, onion powder

Steps:

  1. Preheat Oil: In a deep fryer or large heavy pot, heat vegetable oil to 350°F (175°C).
  2. Prepare Potatoes: Using a mandoline or a sharp knife, slice the potatoes thinly. Rinse the slices under cold water to remove excess starch and pat them dry.
  3. Fry in Batches: Carefully drop a handful of potato slices into the hot oil. Fry until golden brown and crispy, about 2-3 minutes per batch. Avoid overcrowding the pot.
  4. Drain and Season: Remove the chips with a slotted spoon and place them on a paper towel to drain excess oil. Immediately sprinkle with salt and any optional seasonings while they are still warm.
  5. Repeat and Cool: Repeat the frying process with the remaining potato slices. Allow the chips to cool completely to achieve maximum crispiness.
  6. Serve: Once cooled, transfer the homemade potato chips to a bowl or plate. Enjoy the nostalgic taste of Lays-style chips with your preferred dips or savor them on their own.
