Mediterranean Pasta Salad

Ingredients:

  • 8 oz (about 225g) penne or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, torn
  • Salt and black pepper to taste

For Dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Steps:

  1. Cook Pasta: Cook the pasta according to package instructions until al dente. Drain and let it cool.
  2. Prepare Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and black pepper. Set aside.
  3. Combine Ingredients: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and torn basil leaves.
  4. Add Dressing: Pour the prepared dressing over the salad ingredients. Toss gently to ensure an even coating.
  5. Season and Chill: Season the salad with salt and black pepper according to taste. Refrigerate for at least 30 minutes to let the flavors meld.
  6. Serve and Enjoy: Just before serving, give the salad a final toss. Serve chilled, and relish the Mediterranean flavors in every delightful bite.
