Mushroom Pie

Ingredients:

  • 2 cups mushrooms, sliced (combination of button, cremini, and shiitake for depth of flavor)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 cup vegetable or mushroom broth
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 1 package (about 2 sheets) pre-made pie crust (or homemade)
  • 1 egg (for egg wash)

Steps:

  1. Sauté Mushrooms: In a pan, melt butter over medium heat. Add chopped onions and minced garlic. Sauté until softened. Add sliced mushrooms and cook until they release their moisture and become golden brown.
  2. Make Roux: Sprinkle flour over the mushrooms and stir to create a roux. Cook for a few minutes to eliminate the raw flour taste.
  3. Create Filling: Gradually add vegetable or mushroom broth while stirring to avoid lumps. Pour in heavy cream, stirring continuously. Allow the mixture to thicken. Season with salt and black pepper. Remove from heat and let it cool.
  4. Preheat Oven: Preheat your oven to 375°F (190°C).
  5. Assemble Pie: Roll out one pie crust and line your pie dish. Pour in the cooled mushroom filling. Roll out the second crust and cover the pie. Seal the edges and cut slits on top for ventilation.
  6. Bake: Beat the egg and brush it over the pie crust for a golden finish. Bake for 30-35 minutes or until the crust is golden brown and the filling is bubbling.
  7. Serve Warm: Allow the Mushroom Pie to cool for a few minutes before slicing. Serve warm and savor the delicious combination of mushrooms and flaky crust.
