Ingredients:

  • 3 cups potatoes, peeled and finely grated
  • 1 cup aged Montasio cheese (or Parmesan), shredded
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional: rosemary or thyme for added flavor

Steps:

  1. Prepare Potatoes: Grate the peeled potatoes finely. Squeeze out any excess moisture using a kitchen towel.
  2. Combine with Cheese: In a bowl, mix the grated potatoes with shredded Montasio cheese (or Parmesan). Add salt, black pepper, and optional herbs if desired.
  3. Preheat and Grease: Preheat your oven to 375°F (190°C). Grease a baking sheet with olive oil.
  4. Form Patties: Take handfuls of the potato-cheese mixture and shape them into small, flat patties. Place them on the prepared baking sheet.
  5. Bake to Crispiness: Drizzle olive oil over the patties. Bake in the preheated oven for 20-25 minutes or until golden and crispy.
  6. Cool and Serve: Allow the Frico to cool for a few minutes on the baking sheet. Transfer to a serving plate. Serve as a delightful appetizer or a flavorful side dish.
