Pickle Gratin Skewers
Ingredients:
- 1 cup dill pickles, sliced into rounds
- 1 cup cheddar cheese, grated
- 1/2 cup mayonnaise
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water
Calories per serving (approximate): 120 kcal per skewer
Steps:
- Prepare Pickles: Slice dill pickles into rounds, ensuring they are large enough to accommodate skewering.
- Create Gratin Mixture: In a bowl, combine grated cheddar cheese, mayonnaise, Parmesan cheese, minced garlic, Dijon mustard, dried oregano, salt, and pepper. Mix until well combined.
- Skewer Assembly: Take a pickle round and place a small spoonful of the gratin mixture on top. Press another pickle round onto the mixture, creating a "sandwich." Skewer the pickle gratin "sandwich" with a wooden skewer. Repeat for each skewer.
- Broil or Grill: Preheat your broiler or grill. Place the skewers on a baking sheet or grill pan. Broil or grill for 2-3 minutes on each side or until the cheese is melted and bubbly, and the pickles are slightly charred.
- Serve: Arrange the Pickle Gratin Skewers on a platter and serve immediately.
Note: Experiment with different types of pickles, cheeses, or additional seasonings to tailor these skewers to your taste preferences.
