Pickle Gratin Skewers

Ingredients:

  • 1 cup dill pickles, sliced into rounds
  • 1 cup cheddar cheese, grated
  • 1/2 cup mayonnaise
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Steps:

  1. Prepare Pickles: Slice dill pickles into rounds, ensuring they are large enough to accommodate skewering.
  2. Create Gratin Mixture: In a bowl, combine grated cheddar cheese, mayonnaise, Parmesan cheese, minced garlic, Dijon mustard, dried oregano, salt, and pepper. Mix until well combined.
  3. Skewer Assembly: Take a pickle round and place a small spoonful of the gratin mixture on top. Press another pickle round onto the mixture, creating a "sandwich." Skewer the pickle gratin "sandwich" with a wooden skewer. Repeat for each skewer.
  4. Broil or Grill: Preheat your broiler or grill. Place the skewers on a baking sheet or grill pan. Broil or grill for 2-3 minutes on each side or until the cheese is melted and bubbly, and the pickles are slightly charred.
  5. Serve: Arrange the Pickle Gratin Skewers on a platter and serve immediately.
