Restaurant Style Mix Vegetable Sabzi

Mix Veg Curry is made by cooking a mixture of vegetables together in a traditional Indian onion-tomato gravy. The dish is characterized by multiple flavors due to many vegetables which also make it quite nutritious.
INGREDIENTS:
- 3-4 tbsp oil
- 5-6 garlic cloves piece go ginger
- 2-3 green chillies
- 2-3 gry red chillies
- 2 onions roughly chopped
- 3-4 tomatoes roughly chopped
- 10-12 cashews
- 100 gas Paneer pieces
- 1 potato in cubes
- 1 carrot in pieces
- 8-10 beans
- 10-12 cauliflower pieces
- 1 capsicum in pieces handful of peas
- 1 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp roasted fenugreek leaves/kasoori methi
- 1/2 tsp cumin powder
- 1 tsp coriander powder
- 2-3 tbsp fresh cream
- 1/2 tsp garam masala
- Fresh coriander
