Chocolate Ganache Peppermint Cheesecake

Ingredients:

  1. 2 cups chocolate cookie crumbs
  2. 1/2 cup unsalted butter, melted
  3. 24 oz cream cheese, softened
  4. 1 cup granulated sugar
  5. 3 large eggs
  6. 1 tsp peppermint extract
  7. 1 cup sour cream
  8. 1/2 cup heavy cream
  9. 1 cup semisweet chocolate chips
  10. 1/2 cup crushed peppermint candies

Instructions:

Step 1: Prepare the Crust

Combine chocolate cookie crumbs and melted butter. Press into the bottom of a springform pan to create an even crust.

Step 2: Make the Cheesecake Filling

In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in peppermint extract. Fold in sour cream.

Step 3: Bake the Cheesecake

Pour the filling over the crust and bake in a preheated oven at 325°F (163°C) for 50-60 minutes, or until the center is set. Let it cool.

Step 4: Prepare Chocolate Ganache

Heat heavy cream until just boiling, then pour over chocolate chips. Stir until smooth. Spread the ganache over the cooled cheesecake.

Step 5: Add Peppermint Topping

Sprinkle crushed peppermint candies on top of the ganache for a festive finish.

Step 6: Chill and Serve

Refrigerate the cheesecake for at least 4 hours or overnight. Slice, serve, and savor the holiday magic in every bite.
