Ingredients:
- 4 cups potatoes, peeled and cubed (420 kcal)
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces (880 kcal)

- 1 large onion, finely chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced

- 4 cups chicken broth

- 2 tbsp vegetable oil
Cooking Steps:
