A hearty, flavorful, and umami-infused vegetable stew recipe

Discover the art of crafting a robust, indulgent, and savory vegetable stew recipe that will boldly confront winter's chill! Let's get started.

Ingredients:

- 1 red onion

- 3 cloves garlic

- 2 carrots

- 3 celery stalks

- 3 russet potatoes

- 200g king oyster mushrooms

- 2 plant-based sausages

- 2 tomatoes

- 2+2 tbsp avocado oil

- 2 tbsp tomato paste

- Few sprigs of thyme

- 1 cup red wine

- 1 cup frozen peas

- 5 cups vegetable stock

- 1 1/2 tbsp soy sauce

- 1 tsp dark soy sauce

- Chopped parsley for garnish

Directions:

1. Dice the red onion, finely chop the garlic, and cut the carrots into large bite-sized pieces. Finely chop the celery.

2. Chop the russet potatoes into large bite-sized cubes. Quarter the king oyster mushrooms, tear the plant-based sausages into bite-sized pieces, and dice the tomatoes.

3. Heat a stockpot over medium-high heat. Add 2 tbsp of avocado oil, followed by the plant-based sausage. Sauté for 5-6 minutes until crispy. Set aside.

4. Reduce heat to medium and add 2 tbsp avocado oil to the pot. Add onions and garlic; sauté for 5-6 minutes.

5. Add celery and carrots; sauté for a few minutes. Create a well in the middle, add tomato paste and thyme leaves. Stir well.

6. Add tomatoes and stir. Pour in the red wine, increase heat to medium-high, and let it bubble for 2 minutes.

7. Add russet potatoes, king oyster mushrooms, frozen peas, and vegetable stock. Add soy sauce and dark soy sauce. Stir and simmer on medium-low for 25-30 minutes.

8. Transfer 3/4 cups of the stew to a blender, blend briefly, then return to the pot. Stir well.

9. Plate and garnish with crispy plant-based sausages and freshly chopped parsley.
