Ingredients:
- Oladi (Russian Fluffy Pancakes):
- 2 cups all-purpose flour
- 1 cup kefir or buttermilk
- 2 eggs
- 2 tablespoons sugar
- 1 teaspoon baking soda
- A pinch of salt
- Butter or oil for frying
- Syrniki (Cheese Fritters):
- 1 cup farmer's cheese or ricotta
- 1 egg
- 3 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- Pinch of salt
- Butter or oil for frying
- Redcurrant Jam:
- 2 cups redcurrants
- 1 cup sugar
- 1/4 cup water
Preparation Steps:
- Prepare Oladi Batter:
- In a bowl, whisk together flour, kefir or buttermilk, eggs, sugar, baking soda, and a pinch of salt until you achieve a smooth batter. Allow it to rest for 15 minutes.
- Cook Oladi:
- Heat a skillet or griddle over medium heat. Grease with butter or oil. Drop spoonfuls of batter onto the skillet, forming small pancakes. Cook until bubbles appear on the surface, then flip and cook until golden brown.
- Mix Syrniki Ingredients:
- In a separate bowl, combine farmer's cheese or ricotta, egg, sugar, vanilla extract, flour, baking powder, and a pinch of salt. Mix until a cohesive dough forms.
- Shape and Fry Syrniki:
- Shape the dough into small patties and fry them in butter or oil until golden brown on both sides.
- Prepare Redcurrant Jam:
- In a saucepan, combine redcurrants, sugar, and water. Simmer over medium heat, stirring occasionally, until the redcurrants break down and the mixture thickens to a jam-like consistency.
- Serve Warm:
- Arrange Oladi and Syrniki on a platter, serving them warm with a generous dollop of homemade Redcurrant Jam.
