Potato Samosas

Ingredients:

  • 2 cups mashed potatoes (around 400 kcal)
  • 1 cup frozen peas
  • 1/2 cup finely chopped onions
  • 2 teaspoons grated ginger
  • 2 teaspoons minced garlic
  • 1-2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Samosa wrappers or phyllo dough
  • Oil for frying

Preparation Steps:

  1. Prepare the Filling:
    • In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions, ginger, and garlic. Sauté until golden.
    • Add green chilies, peas, and spices (coriander powder, turmeric, garam masala). Cook until peas are tender.
    • Fold in mashed potatoes, salt, and fresh coriander. Mix well and let the filling cool.
  2. Shape the Samosas:
    • Take samosa wrappers or cut phyllo dough into strips. Form triangular cones, sealing the edges with a flour-water paste.
  3. Fill and Seal:
    • Spoon the potato filling into each cone, ensuring a tight seal. Press the edges firmly.
  4. Fry to Crispy Perfection:
    • Heat oil for frying. Carefully place samosas in hot oil and fry until golden brown and crisp.
  5. Drain and Serve:
    • Remove samosas, allowing excess oil to drain. Serve hot with mint chutney or tamarind sauce.
