Ingredients:

  1. 6 large egg yolks
  2. 3/4 cup granulated sugar
  3. 2 cups whole milk (300 kcal)
  4. 1 cup heavy cream (820 kcal)
  5. 1 tsp vanilla extract
  6. 1/2 tsp ground cinnamon
  7. 1/2 tsp ground nutmeg
  8. A pinch of salt
  9. Optional: 1/4 cup dark rum or bourbon (optional, 200 kcal)

Cooking Steps:

Step 1: Whisk Egg Yolks and Sugar

  • In a bowl, whisk together egg yolks and sugar until the mixture is pale and slightly thickened.

Step 2: Heat Milk and Cream

  • In a saucepan, combine whole milk and heavy cream. Heat over medium heat until it reaches a gentle simmer, stirring occasionally.

Step 3: Temper the Eggs

  • Slowly pour the hot milk and cream mixture into the egg yolk mixture, whisking continuously to avoid curdling. This tempers the eggs.

Step 4: Combine with Spices

Step 6: Strain and Chill
