Ingredients:

  1. Fish:
    • 4 cod or haddock fillets
    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 cup cold sparkling water
  2. Chips:
    • 4 large potatoes, cut into thick strips
    • Vegetable oil for frying
    • Salt to taste
  3. Tartar Sauce:
    • 1 cup mayonnaise
    • 2 tablespoons chopped pickles
    • 1 tablespoon capers
    • 1 tablespoon fresh parsley, chopped
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

Steps:

Step 1: Prepare the Batter

  • In a bowl, whisk together flour, baking powder, salt, and pepper.
  • Gradually add sparkling water to create a smooth batter.

Step 2: Coat the Fish

  • Pat the fish fillets dry and dip them into the batter, ensuring an even coating.

Step 3: Make the Chips

  • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Fry potato strips until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Step 4: Fry the Fish

Step 5: Prepare Tartar Sauce

  • Mix mayonnaise, chopped pickles, capers, parsley, lemon juice, salt, and pepper in a bowl.
