Cooking Steps:

Step 1: Heating the Milk

  • In a large pot, combine whole milk, heavy cream, and salt.

Step 2: Curdling the Milk

  • Remove the pot from heat and add white vinegar or lemon juice.
  • Gently stir to combine, then let it sit undisturbed for about 10 minutes. The milk should curdle, forming curds and whey.

Step 3: Draining the Curds

  • Line a colander with cheesecloth and place it over a large bowl.
  • Carefully pour the curdled milk into the colander, allowing the whey to drain off. Let it drain for 1-2 hours.

Step 4: Shaping and Serving

  • Gather the cheesecloth around the curds and squeeze out excess whey.
  • Transfer the fresh ricotta cheese to a bowl, ready to be used in your favorite recipes.
