Delicious Sancocho
Ingredients:
For Meat and Broth:
- 1 pound beef (flank or chuck), cut into chunks
- 1 pound chicken pieces (bone-in, skin-on for flavor)
- 1/2 pound smoked pork sausage, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 quarts chicken or beef broth
- Water as needed
- Salt and black pepper to taste
Vegetables:
- 2 large plantains, peeled and sliced
- 2 large yams or sweet potatoes, peeled and diced
- 2 ears of corn, cut into thirds
- 1 pound yuca (cassava), peeled and cut into chunks
- 3 ripe plantains, peeled and sliced (optional)
- 2 large carrots, peeled and sliced
- 1 bunch cilantro, tied with kitchen twine
- 2 large ears of corn, cut into thirds
For Serving:
- White rice
- Avocado slices
- Lime wedges
- Hot sauce (optional)
Cooking Steps:
Step 1: Prepare Meats and Broth
- In a large pot, combine beef, chicken, smoked pork sausage, chopped onion, minced garlic, and broth.
- Add water as needed to ensure all ingredients are submerged.
- Season with salt and black pepper to taste.
- Bring to a boil, then reduce heat to simmer. Skim off any foam that rises to the surface.
Step 2: Cook Meats
- Allow meats to simmer for at least 1 hour or until they are tender.
- Remove chicken pieces, shred the meat, and return it to the pot.

- Add plantains, yams, corn, yuca, ripe plantains (if using), and carrots to the pot.
- Place the tied bunch of cilantro in the pot.

- Taste the broth and adjust seasoning with salt and pepper if needed.
Step 5: Serve
- Discard the bunch of cilantro.
- Serve the sancocho hot over white rice.
- Garnish with avocado slices and lime wedges.
- Optionally, offer hot sauce on the side for those who enjoy an extra kick.
