Ingredients:

  1. 1 lb fresh white fish or seafood (shrimp, scallops, or a mix), diced
  2. 1 cup fresh lime juice (about 8-10 limes)
  3. 1 cup fresh lemon juice (about 4-6 lemons)
  4. 1 red onion, thinly sliced
  5. 1-2 tomatoes, diced
  6. 1 cucumber, diced
  7. 1-2 jalapeños, finely chopped (adjust according to spice preference)
  8. 1 bunch cilantro, chopped
  9. Salt and pepper to taste
  10. Avocado slices for garnish (optional)
  11. Tortilla chips or tostadas for serving

Cooking Steps:

  1. Prepare the Fish:
    • Ensure the fish or seafood is fresh and diced into bite-sized pieces.
  2. Marinate in Citrus Juices:
    • In a non-reactive bowl, combine the diced fish with lime and lemon juice. Ensure all pieces are submerged. Let it marinate in the refrigerator for at least 30 minutes to 1 hour. The citrus juices "cook" the fish.
  3. Combine Vegetables:
    • After marinating, drain excess citrus juices.
    • Add sliced red onions, diced tomatoes, diced cucumber, chopped jalapeños, and cilantro to the marinated fish.
  4. Season:
    • Season with salt and pepper according to taste. Mix gently to combine all ingredients.
  5. Chill:
    • Return the ceviche to the refrigerator for an additional 15-30 minutes to allow the flavors to meld.
  6. Serve:
    • Garnish with avocado slices if desired.
    • Serve the ceviche chilled on tostadas or with tortilla chips.
