Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1/4 cup ghee (clarified butter) or oil
- A pinch of baking soda
- Salt to taste
- Water (for kneading)
For the Potato Filling:
- 2 large potatoes, boiled and mashed
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon ginger, grated
- 1 green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander, chopped (for garnish)
- Oil for deep frying
Cooking Steps:
For the Dough:
- In a large bowl, combine all-purpose flour, ghee (or oil), baking soda, and salt.
- Gradually add water and knead into a smooth and firm dough.
- Cover the dough and let it rest for 15-20 minutes.
For the Potato Filling:
- In a pan, heat oil. Add cumin seeds and fennel seeds. Allow them to splutter.
- Add grated ginger and chopped green chili. Sauté for a minute.
- Add turmeric powder, coriander powder, and garam masala. Mix well.
- Add boiled and mashed potatoes. Season with salt and cook the filling for 3-5 minutes.
- Garnish with fresh coriander and let the filling cool.
Assembling and Frying Kachoris:
- Divide the dough into equal portions and roll each portion into a small ball.
- Flatten each ball, creating a small well in the center.
- Spoon a portion of the potato filling into the well and seal the edges to form a stuffed ball.
- Roll out the stuffed ball into a flat disc, ensuring the filling is evenly distributed.
- Heat oil in a pan for deep frying.
- Fry the kachoris on medium heat until they turn golden brown and crispy.
- Drain excess oil by placing the fried kachoris on a paper towel.
