Ingredients:

For the Dough:

  1. 2 cups all-purpose flour
  2. 1/4 cup ghee (clarified butter) or oil
  3. A pinch of baking soda
  4. Salt to taste
  5. Water (for kneading)

For the Potato Filling:

  1. 2 large potatoes, boiled and mashed
  2. 1 teaspoon cumin seeds
  3. 1 teaspoon fennel seeds
  4. 1 teaspoon ginger, grated
  5. 1 green chili, finely chopped
  6. 1/2 teaspoon turmeric powder
  7. 1 teaspoon coriander powder
  8. 1/2 teaspoon garam masala
  9. Salt to taste
  10. Fresh coriander, chopped (for garnish)
  11. Oil for deep frying

Cooking Steps:

For the Dough:

  1. In a large bowl, combine all-purpose flour, ghee (or oil), baking soda, and salt.
  2. Gradually add water and knead into a smooth and firm dough.
  3. Cover the dough and let it rest for 15-20 minutes.

For the Potato Filling:

  1. In a pan, heat oil. Add cumin seeds and fennel seeds. Allow them to splutter.
  2. Add grated ginger and chopped green chili. Sauté for a minute.
  3. Add turmeric powder, coriander powder, and garam masala. Mix well.
  4. Add boiled and mashed potatoes. Season with salt and cook the filling for 3-5 minutes.
  5. Garnish with fresh coriander and let the filling cool.

Assembling and Frying Kachoris:

  1. Divide the dough into equal portions and roll each portion into a small ball.
  2. Flatten each ball, creating a small well in the center.
  3. Spoon a portion of the potato filling into the well and seal the edges to form a stuffed ball.
  4. Roll out the stuffed ball into a flat disc, ensuring the filling is evenly distributed.
  5. Heat oil in a pan for deep frying.
  6. Fry the kachoris on medium heat until they turn golden brown and crispy.
  7. Drain excess oil by placing the fried kachoris on a paper towel.
