Ingredients:

For the Lumpiang Togue Filling:

  1. 2 cups mung bean sprouts (togue)
  2. 1 cup julienned carrots
  3. 1 cup sliced green beans
  4. 1 cup firm tofu, diced (optional)
  5. 1/2 cup chopped green onions
  6. 3 cloves garlic, minced
  7. 1 onion, finely chopped
  8. 2 tablespoons soy sauce
  9. 1 tablespoon fish sauce (optional for umami flavor)
  10. Salt and pepper to taste
  11. Cooking oil for sautéing

For Wrapping:

  1. Lumpia/spring roll wrappers
  2. Cornstarch mixed with water (for sealing)

For Frying:

  1. Cooking oil for deep-frying

Cooking Steps:

  1. Prepare Filling:
    • In a pan, sauté garlic and onions in cooking oil until translucent.
    • Add tofu (if using) and cook until slightly browned.
    • Stir in carrots, green beans, and mung bean sprouts. Cook until vegetables are tender-crisp.
    • Season with soy sauce, fish sauce (if using), salt, and pepper.
    • Add chopped green onions, mix well, and remove from heat.
  2. Wrap Lumpiang Togue:
    • Take a lumpia wrapper and place a portion of the vegetable filling on one end.
    • Fold the sides over the filling and roll tightly. Seal the edge with a mixture of cornstarch and water.
  3. Fry Lumpiang Togue:
    • Heat cooking oil in a deep pan.
    • Fry the wrapped lumpia until golden brown and crispy.
    • Remove from oil and drain on paper towels.
  4. Serve and Enjoy:
    • Serve Lumpiang Togue with a dipping sauce of your choice, such as vinegar with garlic and soy sauce.
