Lumpiang Togue
Ingredients:
For the Lumpiang Togue Filling:
- 2 cups mung bean sprouts (togue)
- 1 cup julienned carrots
- 1 cup sliced green beans
- 1 cup firm tofu, diced (optional)
- 1/2 cup chopped green onions
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional for umami flavor)
- Salt and pepper to taste
- Cooking oil for sautéing
For Wrapping:
- Lumpia/spring roll wrappers
- Cornstarch mixed with water (for sealing)
For Frying:
- Cooking oil for deep-frying
Cooking Steps:
- Prepare Filling:
- In a pan, sauté garlic and onions in cooking oil until translucent.
- Add tofu (if using) and cook until slightly browned.
- Stir in carrots, green beans, and mung bean sprouts. Cook until vegetables are tender-crisp.
- Season with soy sauce, fish sauce (if using), salt, and pepper.
- Add chopped green onions, mix well, and remove from heat.
- Wrap Lumpiang Togue:
- Take a lumpia wrapper and place a portion of the vegetable filling on one end.
- Fold the sides over the filling and roll tightly. Seal the edge with a mixture of cornstarch and water.
- Fry Lumpiang Togue:
- Heat cooking oil in a deep pan.
- Fry the wrapped lumpia until golden brown and crispy.
- Remove from oil and drain on paper towels.
- Serve and Enjoy:
- Serve Lumpiang Togue with a dipping sauce of your choice, such as vinegar with garlic and soy sauce.
