Ingredients:
For the Meringue Layers:
- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
For the Chestnut Cream:
- 1 cup sweetened chestnut puree
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1 teaspoon vanilla extract
For the Chocolate Drizzle:
- 1/2 cup dark chocolate, melted

- Chestnuts (optional)
- Whipped cream (optional)
Cooking Steps:
For the Meringue Layers:
- Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
- In a clean, dry bowl, beat egg whites until soft peaks form.
- Gradually add sugar, vinegar, cornstarch, and vanilla extract. Continue beating until stiff, glossy peaks form.
- Divide the mixture into three portions and spread each portion into a circle on the prepared baking sheets.
- Bake for about 45-60 minutes or until the meringue layers are crisp and dry. Allow them to cool completely.
For the Chestnut Cream:
- In a bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Gently fold sweetened chestnut puree into the whipped cream.
Assembly:
- Place one meringue layer on a serving plate.
- Spread a layer of chestnut cream over the meringue.
- Repeat the process with the remaining layers, finishing with a layer of chestnut cream on top.
- Drizzle melted dark chocolate over the top.
- Garnish with chestnuts and whipped cream if desired.
