Ingredients:

For the Meringue Layers:

  1. 4 large egg whites
  2. 1 cup granulated sugar
  3. 1 teaspoon white vinegar
  4. 1 teaspoon cornstarch
  5. 1 teaspoon vanilla extract

For the Chestnut Cream:

  1. 1 cup sweetened chestnut puree
  2. 1 cup heavy cream
  3. 1 tablespoon powdered sugar
  4. 1 teaspoon vanilla extract

For the Chocolate Drizzle:

  1. 1/2 cup dark chocolate, melted

For Garnish:

  1. Chestnuts (optional)
  2. Whipped cream (optional)

Cooking Steps:

For the Meringue Layers:

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a clean, dry bowl, beat egg whites until soft peaks form.
  3. Gradually add sugar, vinegar, cornstarch, and vanilla extract. Continue beating until stiff, glossy peaks form.
  4. Divide the mixture into three portions and spread each portion into a circle on the prepared baking sheets.
  5. Bake for about 45-60 minutes or until the meringue layers are crisp and dry. Allow them to cool completely.

For the Chestnut Cream:

  1. In a bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  2. Gently fold sweetened chestnut puree into the whipped cream.

Assembly:

  1. Place one meringue layer on a serving plate.
  2. Spread a layer of chestnut cream over the meringue.
  3. Repeat the process with the remaining layers, finishing with a layer of chestnut cream on top.
  4. Drizzle melted dark chocolate over the top.
  5. Garnish with chestnuts and whipped cream if desired.
