Ingredients:

  1. 1 liter full-fat milk
  2. 1/4 cup lemon juice or vinegar
  3. 1 cup sugar
  4. 1/4 cup water
  5. 1/2 teaspoon cardamom powder
  6. Chopped nuts for garnish (pistachios, almonds, or cashews)

Cooking Steps:

  1. In a pan, bring the milk to a boil. Once boiling, add lemon juice or vinegar gradually while stirring until the milk curdles.
  2. Drain the whey using a muslin cloth or fine sieve, leaving behind the chenna or paneer.
  3. Knead the chenna for 10-15 minutes until it becomes smooth and pliable.
  4. In another pan, combine sugar and water to make a syrup. Bring it to a boil and then simmer until it reaches a one-string consistency.
  5. Add the kneaded chenna to the sugar syrup, stirring continuously over low heat.
  6. Cook until the mixture thickens and leaves the sides of the pan.
  7. Add cardamom powder and mix well.
  8. Transfer the mixture to a greased tray and spread it evenly.
  9. Garnish with chopped nuts and let it cool.
  10. Once set, cut the milk cake into desired shapes.
