Ingredients:

  • For Vada:
    • 4 large potatoes, boiled and mashed
    • 1 cup gram flour (besan)
    • 1 tablespoon rice flour
    • 1 teaspoon mustard seeds
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon turmeric powder
    • A pinch of asafoetida (hing)
    • 2-3 green chilies, finely chopped
    • 1 tablespoon ginger-garlic paste
    • Fresh coriander leaves, chopped
    • Salt to taste
    • Oil for frying
  • For Chutneys:
    • Green chutney (coriander, mint, green chilies, and lemon)
    • Tamarind chutney (tamarind pulp, dates, jaggery, and spices)
  • Pav (soft bread rolls)

Cooking Steps:

Step 1: Make Potato Mixture Mix mashed potatoes, gram flour, rice flour, mustard seeds, cumin seeds, turmeric powder, asafoetida, green chilies, ginger-garlic paste, coriander leaves, and salt. Form small balls and flatten them to make the Vada.

Step 2: Fry the Vada Deep fry the Vada until golden brown and crisp.

Step 3: Prepare Chutneys Blend ingredients for green chutney and tamarind chutney separately. Adjust sweetness and spice levels to taste.

Step 4: Assemble Vada Pav Cut the pav in half. Spread green chutney on one side and tamarind chutney on the other. Place a Vada in between.

Step 5: Serve Hot Serve Vada Pav hot, optionally with fried green chilies or a side of fried green chilies and garlic.
