Aloo Ka Lachedar Paratha

Ingredients:

For Paratha Dough:

  • 2 cups whole wheat flour
  • Water (as needed)
  • Salt to taste
  • 2 tablespoons ghee or oil (for layering)

For Aloo Filling:

  • 3 medium-sized potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Fresh coriander leaves, chopped
  • Salt to taste
  • Ghee or oil (for cooking)

Preparation:

Step 1: Prepare Paratha Dough

  • In a bowl, combine whole wheat flour, salt, and water to form a soft dough. Knead well, cover, and let it rest for 15-20 minutes.

Step 2: Make Aloo Filling

  • In another bowl, mix together boiled and mashed potatoes, finely chopped onion, green chili, grated ginger, cumin seeds, garam masala, red chili powder, chopped fresh coriander leaves, and salt. Ensure the mixture is well combined.

Step 3: Divide Dough and Filling

  • Divide the rested dough into equal-sized portions. Roll each portion into a ball. Similarly, divide the aloo filling into portions.

Step 4: Roll Dough Portion

  • Take a dough ball, flatten it, and place a portion of the aloo filling in the center. Bring the edges of the dough together to enclose the filling. Flatten the stuffed ball gently.

Step 5: Create Layers

  • Roll the stuffed ball into a flat, round paratha using a rolling pin. Apply ghee or oil on the rolled-out surface. Fold it into half, apply ghee or oil again, and fold it into a quarter.

Step 6: Roll Again

  • Roll the folded dough into a paratha, ensuring that the layers are intact. Repeat for the remaining dough and filling.

Step 7: Cook Parathas

  • Heat a griddle or tawa over medium heat. Place the rolled paratha on the hot griddle. Cook one side until small bubbles appear, then flip it. Apply ghee or oil on the cooked side.

Step 8: Cook Both Sides

  • Continue cooking, applying ghee or oil on both sides, until the paratha is golden brown and cooked thoroughly.

Step 9: Repeat

  • Repeat the process for the remaining dough balls and aloo filling.

Step 10: Serve Hot

  • Serve Aloo ka Lachedar Paratha hot off the griddle with yogurt, pickles, or your favorite chutney.
