Marron Cake
Ingredients:
For Marron Paste:
- 1 cup cooked and peeled chestnuts (marrons)
- 1/4 cup milk
- 2 tablespoons honey or maple syrup
For Marron Cake Batter:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup plain Greek yogurt or sour cream
Optional Toppings:
- Powdered sugar for dusting
- Chopped roasted chestnuts for garnish
Preparation:
Step 1: Prepare Marron Paste In a blender or food processor, blend cooked and peeled chestnuts with milk and honey (or maple syrup) until you achieve a smooth marron paste. Set aside.
Step 2: Preheat Oven Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
Step 3: Combine Dry Ingredients In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
Step 4: Cream Butter and Sugar In another bowl, cream together softened butter and granulated sugar until light and fluffy.
Step 5: Add Eggs and Vanilla Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Step 6: Alternate Adding Ingredients Gradually add the dry ingredients to the wet ingredients, alternating with Greek yogurt (or sour cream). Begin and end with the dry ingredients. Mix until just combined.
Step 7: Add Marron Paste Fold the prepared marron paste into the cake batter until well incorporated.
Step 8: Bake Pour the batter into the prepared cake pan. Smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Step 9: Cool and Garnish Allow the Marron Cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar and garnish with chopped roasted chestnuts if desired.
Step 10: Slice and Serve Slice the Marron Cake and serve, savoring the delightful chestnut flavors.
