Healthy Cauliflower Gratin
Ingredients:
- 1 large head cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk, warmed
- 1 cup grated Gruyère or Swiss cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Dijon mustard
- Salt and black pepper to taste
- 1/4 teaspoon nutmeg, freshly grated
- Breadcrumbs (optional, for topping)
- Fresh parsley, chopped (for garnish)
Preparation:
Step 1: Preheat Oven Preheat your oven to 375°F (190°C). Butter a baking dish or gratin dish.
Step 2: Blanch Cauliflower Bring a large pot of salted water to a boil. Add cauliflower florets and blanch for about 5 minutes, or until slightly tender. Drain and set aside.
Step 3: Make Béchamel Sauce In a saucepan, melt butter over medium heat. Stir in the flour to create a roux. Cook for 2-3 minutes, stirring continuously. Gradually whisk in the warm milk, ensuring there are no lumps. Continue whisking until the mixture thickens.
Step 4: Add Cheese and Seasonings Remove the saucepan from heat and stir in the grated Gruyère or Swiss cheese, grated Parmesan cheese, Dijon mustard, nutmeg, salt, and black pepper. Mix until the cheeses are melted and the sauce is smooth.
Step 5: Combine Cauliflower and Sauce Add the blanched cauliflower florets to the cheese sauce, coating them evenly.
Step 6: Transfer to Baking Dish Transfer the cauliflower mixture to the prepared baking dish, spreading it out evenly.
Step 7: Optional Topping If desired, sprinkle breadcrumbs on top for a crispy topping.
Step 8: Bake Bake in the preheated oven for 25-30 minutes or until the cauliflower is tender and the top is golden brown.
Step 9: Garnish and Serve Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
