Ingredients:

  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon sugar
  • 3/4 cup warm milk
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon unsalted butter, softened
  • Cornmeal for dusting

Steps:

  1. In a bowl, combine warm milk, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and softened butter.
  3. Mix until a dough forms, then knead on a floured surface for about 5-8 minutes or until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size (approximately 1-1.5 hours).
  5. Punch down the risen dough and roll it out on a floured surface to about 1/2 inch thickness.
  6. Using a round cutter, cut out the English muffins. Dust each side with cornmeal.
  7. Heat a griddle or skillet over medium-low heat. Cook the muffins for 6-8 minutes on each side or until golden brown.
