Blueberry French Toast

Ingredients:

  • 8 slices of thick bread (challah or brioche work well)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup fresh blueberries
  • Butter for cooking
  • Maple syrup for serving
  • Powdered sugar for garnish (optional)

Steps:

  1. In a mixing bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt.
  2. Heat a griddle or non-stick skillet over medium heat.
  3. Dip each slice of bread into the egg mixture, ensuring both sides are well-coated.
  4. Melt butter on the griddle and cook the soaked bread slices until golden brown on both sides.
  5. While cooking, sprinkle fresh blueberries onto the cooking side of each slice, pressing them gently into the bread.
  6. Once the French toast is cooked and blueberries are slightly softened, transfer to a serving plate.
  7. Drizzle with maple syrup and sprinkle with powdered sugar if desired.
