Yam Ambot Tik Curry

Ingredients:

  • 2 cups yam, peeled and cubed
  • 1 cup onions, finely chopped
  • 1 cup tomatoes, chopped
  • 1/2 cup tamarind pulp
  • 1/4 cup grated coconut
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon red chili powder (adjust to spice preference)
  • Salt to taste
  • Fresh coriander leaves for garnish

Steps:

  1. Heat vegetable oil in a pan. Add mustard seeds, fenugreek seeds, and cumin seeds. Allow them to splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in turmeric powder, coriander powder, and red chili powder. Cook for a minute until fragrant.
  4. Add chopped tomatoes and cook until they turn soft.
  5. Add yam cubes to the spice mixture and sauté for a few minutes.
  6. Pour in tamarind pulp and grated coconut. Mix well.
  7. Add enough water to cover the yam cubes, bring to a boil, then reduce heat and simmer until the yam is tender.
  8. Season with salt according to taste.
  9. Garnish with fresh coriander leaves before serving.

Serve this Yam Ambot Tik Curry with steamed rice or Indian bread for a delightful culinary experience that captures the essence of regional Indian flavors.
