Yam Ambot Tik Curry

Ingredients:
- 2 cups yam, peeled and cubed
- 1 cup onions, finely chopped
- 1 cup tomatoes, chopped
- 1/2 cup tamarind pulp
- 1/4 cup grated coconut
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon red chili powder (adjust to spice preference)
- Salt to taste
- Fresh coriander leaves for garnish
Steps:
- Heat vegetable oil in a pan. Add mustard seeds, fenugreek seeds, and cumin seeds. Allow them to splutter.
- Add chopped onions and sauté until golden brown.
- Stir in turmeric powder, coriander powder, and red chili powder. Cook for a minute until fragrant.
- Add chopped tomatoes and cook until they turn soft.
- Add yam cubes to the spice mixture and sauté for a few minutes.
- Pour in tamarind pulp and grated coconut. Mix well.
- Add enough water to cover the yam cubes, bring to a boil, then reduce heat and simmer until the yam is tender.
- Season with salt according to taste.
- Garnish with fresh coriander leaves before serving.
Serve this Yam Ambot Tik Curry with steamed rice or Indian bread for a delightful culinary experience that captures the essence of regional Indian flavors.
