Lemon, Courgette, Pea & Prawn Pasta

Ingredients:

  • 250g linguine pasta
  • 1 large courgette, thinly sliced
  • 1 cup peas (fresh or frozen)
  • 200g prawns, peeled and deveined
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Grated Parmesan cheese for serving (optional)

Steps:

Step 1: Cook the linguine pasta according to package instructions. Reserve a cup of pasta water before draining.

Step 2: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

Step 3: Add sliced courgette to the skillet and cook until tender. Stir in peas and cook for an additional 2-3 minutes.

Step 4: Incorporate the prawns into the skillet, cooking until they turn pink and opaque.

Step 5: Toss in the cooked linguine, lemon zest, and chopped parsley. If needed, add reserved pasta water to achieve desired consistency.

Step 6: Season with salt and pepper to taste. Serve hot, optionally garnished with grated Parmesan cheese.
