Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 sweet potato, peeled and diced
- 1/2 cup peanut butter
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 cups kale, stems removed and chopped
- 1 teaspoon red curry paste (adjust to taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Crushed peanuts and fresh cilantro for garnish
Steps:
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent.
- Stir in minced garlic and grated ginger. Sauté for an additional minute until fragrant.
- Add diced sweet potatoes to the pot and cook for a few minutes, allowing them to slightly brown.
- Incorporate peanut butter into the mixture, stirring until it melts and coats the vegetables.
