Funfetti Cupcakes
Ingredients:
For Cupcakes:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 1/2 cup rainbow sprinkles (Funfetti)
For Buttercream Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup whole milk
- 2 teaspoons vanilla extract
- Rainbow sprinkles for decorating
Steps:
Prepare Cupcakes:
- Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a separate large bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
- Gently fold in rainbow sprinkles (Funfetti) into the batter.
- Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting.
Prepare Buttercream Frosting:
- In a large bowl, beat softened butter until creamy.
- Gradually add powdered sugar, milk, and vanilla extract. Beat until smooth and fluffy.
Assemble and Decorate:
- Once the cupcakes are completely cooled, frost them with the buttercream frosting using a piping bag or spatula.
- Decorate the cupcakes with additional rainbow sprinkles on top.
- Serve and enjoy the fun and festive Funfetti Cupcakes!
