Delicious Aloo Egg Nashta

Ingredients:

  • 4 medium-sized potatoes, boiled, peeled, and grated
  • 4 eggs
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Cooking oil or ghee for frying

Steps:

  1. In a pan, heat cooking oil or ghee over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw aroma disappears.
  4. Add chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
  5. Sprinkle turmeric powder, red chili powder, and garam masala over the mixture. Mix well and cook for an additional minute.
  6. Add the grated boiled potatoes to the pan. Mix the potatoes with the spice mixture.
  7. Create small wells in the potato mixture and crack eggs into the wells.
  8. Cover the pan and cook until the eggs are cooked to your liking (runny or fully cooked).
  9. Season with salt to taste and garnish with fresh coriander leaves.
  10. Serve the Aloo Egg Nashta hot with chapati or bread.
