Delicious Aloo Egg Nashta

Ingredients:
- 4 medium-sized potatoes, boiled, peeled, and grated
- 4 eggs
- 1 onion, finely chopped
- 1 tomato, chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Cooking oil or ghee for frying
Steps:
- In a pan, heat cooking oil or ghee over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw aroma disappears.
- Add chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
- Sprinkle turmeric powder, red chili powder, and garam masala over the mixture. Mix well and cook for an additional minute.
- Add the grated boiled potatoes to the pan. Mix the potatoes with the spice mixture.
- Create small wells in the potato mixture and crack eggs into the wells.
- Cover the pan and cook until the eggs are cooked to your liking (runny or fully cooked).
- Season with salt to taste and garnish with fresh coriander leaves.
- Serve the Aloo Egg Nashta hot with chapati or bread.
