British Bubble & Squeak with Spicy Latin Beans

Ingredients:
For British Bubble & Squeak:
- Leftover mashed potatoes
- Leftover cooked vegetables (cabbage, carrots, peas, etc.)
- Cooking oil or butter for frying
For Spicy Latin Beans:
- 1 can (15 oz) black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Fresh cilantro for garnish
Steps:
British Bubble & Squeak:
- In a large mixing bowl, combine leftover mashed potatoes and cooked vegetables. Mash them together until well combined.
- Heat cooking oil or butter in a skillet over medium heat.
- Form the mashed potato and vegetable mixture into patties and place them in the skillet.
- Cook the patties until golden brown on both sides, creating a crispy exterior. This may take about 4-5 minutes per side.
- Once cooked, remove the Bubble & Squeak patties from the skillet and set aside.
Spicy Latin Beans:
- In a separate pan, heat olive oil over medium heat. Add finely chopped onions and sauté until translucent.
- Add minced garlic to the onions and sauté until fragrant.
- Stir in ground cumin, paprika, and cayenne pepper. Cook for an additional minute.
- Add drained black beans to the spice mixture. Season with salt and pepper to taste.
- Cook the beans, stirring occasionally, until heated through and infused with the flavors of the spices.
Assembly:
- Serve the British Bubble & Squeak patties alongside a generous portion of Spicy Latin Beans.
- Garnish with fresh cilantro before serving.
