British Bubble & Squeak with Spicy Latin Beans

Ingredients:

For British Bubble & Squeak:

  • Leftover mashed potatoes
  • Leftover cooked vegetables (cabbage, carrots, peas, etc.)
  • Cooking oil or butter for frying

For Spicy Latin Beans:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps:

British Bubble & Squeak:

  1. In a large mixing bowl, combine leftover mashed potatoes and cooked vegetables. Mash them together until well combined.
  2. Heat cooking oil or butter in a skillet over medium heat.
  3. Form the mashed potato and vegetable mixture into patties and place them in the skillet.
  4. Cook the patties until golden brown on both sides, creating a crispy exterior. This may take about 4-5 minutes per side.
  5. Once cooked, remove the Bubble & Squeak patties from the skillet and set aside.

Spicy Latin Beans:

  1. In a separate pan, heat olive oil over medium heat. Add finely chopped onions and sauté until translucent.
  2. Add minced garlic to the onions and sauté until fragrant.
  3. Stir in ground cumin, paprika, and cayenne pepper. Cook for an additional minute.
  4. Add drained black beans to the spice mixture. Season with salt and pepper to taste.
  5. Cook the beans, stirring occasionally, until heated through and infused with the flavors of the spices.

Assembly:

  1. Serve the British Bubble & Squeak patties alongside a generous portion of Spicy Latin Beans.
  2. Garnish with fresh cilantro before serving.
