Ingredients:

- 1 cup shredded cheese (cheddar, Gruyère, or your choice)
For the Flan Layer:
- 4 large eggs
- 1 cup milk
- Salt and pepper to taste
- Nutmeg (optional)
For Caramelized Topping:
- 1/2 cup sugar
- 2 tablespoons water
Steps:
Caramelized Topping:
- In a saucepan, combine sugar and water over medium heat.
- Allow the sugar to dissolve and caramelize, swirling the pan occasionally to distribute the color evenly.
- Once the caramel reaches a golden brown color, quickly pour it into the bottom of a baking dish, ensuring an even coating.
Potato Layer:
- Preheat your oven to 350°F (175°C).
- In a skillet, melt butter over medium heat. Add thinly sliced potatoes and cook until they are softened but not fully cooked.
- Season the potatoes with salt and pepper, and arrange them over the caramelized layer in the baking dish.
- Sprinkle shredded cheese over the potatoes.
Flan Layer:
- In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg if using.
- Carefully pour the egg mixture over the potatoes and cheese.
Baking:
- Place the baking dish in a larger pan filled with hot water (bain-marie/water bath).
- Bake in the preheated oven for approximately 40-50 minutes or until the flan is set and golden on top.
