Blueberry Cheesecake - Vegan & Gluten-Free

Ingredients:
For the Crust:
- 1 1/2 cups gluten-free graham cracker crumbs (or gluten-free oats processed into crumbs)
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
For the Cheesecake Filling:
- 2 cups raw cashews, soaked overnight or in hot water for at least 2 hours, then drained
- 1/2 cup coconut cream
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- A pinch of salt
For the Blueberry Topping:
- 1 1/2 cups fresh or frozen blueberries
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon water
Steps:
Crust:
- In a bowl, combine gluten-free graham cracker crumbs, melted coconut oil, and maple syrup. Mix until well combined.
- Press the crust mixture into the bottom of a greased or lined springform pan, creating an even layer.
- Place the crust in the refrigerator while preparing the filling.
Cheesecake Filling:
- In a high-speed blender, combine soaked and drained cashews, coconut cream, melted coconut oil, maple syrup, lemon juice, vanilla extract, and a pinch of salt.
- Blend the ingredients until smooth and creamy, scraping down the sides as needed.
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Smooth the top with a spatula and tap the pan on the counter to remove any air bubbles.
- Place the cheesecake in the freezer for at least 4-6 hours or until set.
Blueberry Topping:
- In a saucepan, combine blueberries, maple syrup, lemon juice, and water.
- Cook the mixture over medium heat, stirring occasionally, until the blueberries burst and the sauce thickens slightly.
- Allow the blueberry topping to cool before spreading it over the chilled cheesecake.
- Return the cheesecake to the freezer for an additional 2-3 hours or until the blueberry topping is set.
- Before serving, transfer the cheesecake to the refrigerator for about 1-2 hours to allow it to soften slightly.
