Ultimate Twice-Baked Potatoes

Ingredients:

  • 4 large baking potatoes
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons chopped fresh chives
  • Salt and black pepper to taste

Steps:

Step 1: Preheat your oven to 400°F (200°C).

Step 2: Wash and scrub the baking potatoes. Pierce each potato with a fork several times.

Step 3: Bake the potatoes directly on the oven rack for about 45-60 minutes or until tender.

Step 4: Remove the potatoes from the oven and let them cool slightly.

Step 5: Cut a thin slice from the top of each potato. Scoop out the insides, leaving a thin shell.

Step 6: In a bowl, mash the potato insides. Add sour cream, softened butter, shredded cheddar cheese, grated Parmesan cheese, crumbled bacon, chopped chives, salt, and black pepper. Mix until well combined.

Step 7: Spoon the mashed potato mixture back into the hollowed-out potato shells.

Step 8: Place the stuffed potatoes on a baking sheet.

Step 9: Bake in the preheated oven for an additional 20-25 minutes or until the tops are golden brown.

Step 10: Remove from the oven, garnish with additional chives if desired, and serve hot.
