Simmered Daikon with Ground Chicken

Ingredients:

  • 1 lb daikon radish, peeled and cut into bite-sized chunks
  • 1/2 lb ground chicken
  • 1 tablespoon vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons mirin (sweet rice wine)
  • 1 tablespoon sake (Japanese rice wine)
  • 1 tablespoon sugar
  • 1 cup dashi (Japanese soup stock) or water
  • Green onions, thinly sliced, for garnish
  • Toasted sesame seeds, for garnish

Steps:

Step 1: In a pot, heat vegetable oil over medium heat. Add ground chicken and cook until browned.

Step 2: Add daikon chunks to the pot and sauté briefly.

Step 3: Pour in soy sauce, mirin, sake, and sugar. Stir to combine.

Step 4: Add dashi or water to the pot, ensuring it covers the daikon and chicken.

Step 5: Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes or until the daikon becomes tender.

Step 6: Occasionally check and skim off any foam that rises to the surface.

Step 7: Once the daikon is tender and the flavors have melded, adjust seasoning if needed.

Step 8: Garnish with sliced green onions and toasted sesame seeds before serving.

Serve this Simmered Daikon with Ground Chicken over rice for a wholesome and satisfying Japanese dish.
