Veg Kaju Malai Curry

Ingredients:

  • 1 cup mixed vegetables (carrots, peas, beans, potatoes), chopped
  • 1/2 cup cashews, soaked in warm water
  • 1 cup onions, finely chopped
  • 1 cup tomatoes, pureed
  • 1/2 cup malai (cream)
  • 1/4 cup yogurt
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons ghee or oil
  • Fresh coriander leaves for garnish

Steps:

Step 1: Boil the mixed vegetables until they are just tender. Set aside.

Step 2: In a blender, make a smooth paste by blending soaked cashews with a little water.

Step 3: In a pan, heat ghee or oil. Add chopped onions and sauté until golden brown.

Step 4: Add ginger-garlic paste and cook until the raw smell disappears.

Step 5: Add tomato puree and cook until the oil separates from the masala.

Step 6: Stir in turmeric powder, red chili powder, garam masala, and coriander powder. Cook the spices for a couple of minutes.

Step 7: Add the boiled vegetables to the masala and mix well.

Step 8: Pour in the cashew paste, malai, and yogurt. Stir to combine.

Step 9: Season with salt and simmer the curry on low heat for 10-15 minutes, allowing the flavors to meld.

Step 10: Garnish with fresh coriander leaves before serving.

Serve this Veg Kaju Malai Curry with naan or rice for a luxurious and flavorful dining experience.
