Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake (or white wine)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Cooked white rice (to serve)

Cooking Steps:

Step 1: In a bowl, whisk together soy sauce, mirin, sake, honey (or brown sugar), sesame oil, grated ginger, and minced garlic to create the teriyaki sauce.

Step 2: Place the chicken pieces in a shallow dish or a resealable plastic bag. Pour half of the teriyaki sauce over the chicken and let it marinate for at least 30 minutes, or refrigerate for a few hours for more flavor.

Step 3: Heat a skillet or pan over medium-high heat. Add a bit of oil.

Step 4: Remove the chicken from the marinade and cook in the hot skillet until fully cooked and caramelized, about 5-7 minutes.

Step 5: Pour the remaining teriyaki sauce over the cooked chicken, allowing it to simmer and thicken for an additional 2-3 minutes.

Step 6: Garnish with chopped green onions and sesame seeds.

Step 7: Serve the Chicken Teriyaki over cooked white rice.
