Gluten-free and Refined Sugar-free Muffin
Ingredients:
- 2 cups gluten-free flour blend
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
- 1/2 cup pure maple syrup or honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup unsweetened applesauce
- 1 cup fresh berries (blueberries, raspberries, or strawberries)
- Optional: Chopped nuts or seeds for added texture
Cooking Steps:
Step 1: Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
Step 2: In a bowl, whisk together gluten-free flour, baking powder, baking soda, and salt.
Step 3: In a separate bowl, mix melted coconut oil, maple syrup (or honey), eggs, and vanilla extract until well combined.
Step 4: Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Step 5: Fold in unsweetened applesauce and fresh berries. Add nuts or seeds if desired.
Step 6: Spoon the batter into the muffin cups, filling each about 2/3 full.
Step 7: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Step 8: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
