Authentic, Easy Chicken Pad Thai at Home

Ingredients:

  1. 8 oz rice noodles
  2. 2 tablespoons vegetable oil
  3. 1 cup chicken breast, thinly sliced
  4. 2 cloves garlic, minced
  5. 2 eggs, lightly beaten
  6. 1 cup bean sprouts
  7. 4 green onions, sliced
  8. 1/2 cup crushed peanuts
  9. Lime wedges for garnish
  10. Fresh cilantro for garnish

For the Sauce:

  1. 3 tablespoons fish sauce
  2. 1 tablespoon soy sauce
  3. 1 tablespoon tamarind paste
  4. 1 tablespoon brown sugar
  5. 1/2 teaspoon chili powder (adjust to taste)

Instructions:

Step 1: Cook rice noodles according to package instructions, then drain and set aside.

Step 2: In a wok or large skillet, heat vegetable oil over medium-high heat. Add sliced chicken and cook until browned and cooked through.

Step 3: Push the chicken to one side of the pan, add minced garlic, and stir briefly until fragrant. Push the garlic to the same side as the chicken.

Step 4: Pour beaten eggs into the empty side of the pan, scrambling them until just set.

Step 5: Mix the cooked chicken, garlic, and eggs together. Add cooked noodles and bean sprouts to the pan.

Step 6: In a small bowl, whisk together fish sauce, soy sauce, tamarind paste, brown sugar, and chili powder to make the sauce.

Step 7: Pour the sauce over the noodle mixture and toss everything together until well combined.

Step 8: Add sliced green onions and toss again. Serve hot, garnished with crushed peanuts, lime wedges, and fresh cilantro.
