Spicy Sausage Rigatoni

Ingredients:

  1. 1 lb rigatoni pasta
  2. 1 lb spicy Italian sausage, casings removed
  3. 1 tablespoon olive oil
  4. 1 onion, finely chopped
  5. 3 cloves garlic, minced
  6. 1 can (28 oz) crushed tomatoes
  7. 1 teaspoon dried oregano
  8. 1/2 teaspoon red pepper flakes (adjust to taste)
  9. Salt and black pepper to taste
  10. Fresh basil or parsley for garnish

Instructions:

Step 1: Cook rigatoni according to package instructions. Drain and set aside.

Step 2: In a large pan, heat olive oil over medium heat. Add chopped onion and cook until softened.

Step 3: Add minced garlic and cook for another minute until fragrant.

Step 4: Add spicy Italian sausage, breaking it up with a spoon as it cooks until browned.

Step 5: Pour in crushed tomatoes, oregano, red pepper flakes, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally.
