Gennaros Tagliatelle Alfredo

Ingredients:

  1. Tagliatelle pasta - 400g
  2. Unsalted butter - 1/2 cup
  3. Heavy cream - 1 cup
  4. Parmesan cheese, freshly grated - 1 cup
  5. Salt - to taste
  6. Black pepper - freshly ground, to taste
  7. Nutmeg - a pinch (optional)
  8. Fresh parsley - chopped, for garnish

Steps:

Step 1: Cook tagliatelle pasta in salted boiling water until al dente. Reserve some pasta water before draining.
Step 2: In a pan, melt butter over low heat. Pour in heavy cream and whisk until combined.

Step 3: Gradually add freshly grated Parmesan cheese, stirring continuously to create a smooth and creamy sauce.
Step 4: Season the sauce with salt and freshly ground black pepper. Add a pinch of nutmeg for extra depth if desired.

Step 5: Toss the cooked tagliatelle in the Alfredo sauce, ensuring each strand is coated evenly. If needed, use reserved pasta water to adjust consistency.
Step 6: Garnish with chopped fresh parsley and an extra sprinkle of Parmesan.
