One-Pan Greens Pasta Bake

Ingredients:

  1. 8 oz (about 225g) pasta of your choice
  2. 2 cups broccoli florets
  3. 1 cup spinach, chopped
  4. 1 cup peas
  5. 1/2 cup asparagus, chopped
  6. 1/2 cup green beans, chopped
  7. 1 onion, finely chopped
  8. 3 cloves garlic, minced
  9. 1 can (14 oz) diced tomatoes
  10. 1 cup tomato sauce
  11. 1 teaspoon dried oregano
  12. 1 teaspoon dried basil
  13. Salt and pepper to taste
  14. 1 cup shredded mozzarella cheese
  15. 1/4 cup grated Parmesan cheese
  16. Olive oil for greasing

Instructions:

Step 1: Preheat your oven to 375°F (190°C).

Step 2: Cook the pasta according to package instructions until al dente. Drain and set aside.

Step 3: In a large oven-safe pan, sauté the chopped onion and minced garlic in olive oil until softened.

Step 4: Add the broccoli, spinach, peas, asparagus, and green beans to the pan. Cook until the vegetables are slightly tender.

Step 5: Pour in the diced tomatoes, tomato sauce, dried oregano, dried basil, salt, and pepper. Stir to combine.

Step 6: Add the cooked pasta to the pan and mix well, ensuring the pasta is evenly coated with the sauce.

Step 7: Sprinkle the shredded mozzarella and grated Parmesan cheese on top.

Step 8: Transfer the pan to the preheated oven and bake for 20-25 minutes or until the cheese is melted and bubbly.

Step 9: Remove from the oven and let it rest for a few minutes before serving.
