Ingredients:

  • 2 cups crushed pineapple (canned or fresh)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup desiccated coconut
  • Whipped cream and pineapple slices for garnish

Steps:

Step 1: In a mixing bowl, combine crushed pineapple and sugar. Let it sit for 10 minutes to allow the sugar to dissolve.

Step 2: In another bowl, whisk together flour, baking soda, and salt.

Step 3: Add the melted butter and vanilla extract to the pineapple mixture, mixing well.

Step 4: Gradually fold in the dry ingredients until a smooth batter forms.

Step 5: Stir in desiccated coconut for added texture.

Step 6: Line a cake pan with parchment paper and pour the batter into it.
