Toasted Orzo with Chicken

Ingredients:

  • 1 cup orzo pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • Crumbled feta cheese for garnish (optional)

Steps:

Step 1: Cook the orzo according to package instructions. Drain and set aside.

Step 2: In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.

Step 3: In the same skillet, add chopped onion and cook until softened. Add minced garlic and cook for an additional 1-2 minutes.

Step 4: Add the cooked orzo, cherry tomatoes, Kalamata olives, fresh parsley, dried oregano, salt, and black pepper to the skillet. Mix well.

Step 5: Return the cooked chicken to the skillet and toss until all ingredients are evenly combined.

Step 6: Squeeze the juice of one lemon over the mixture and stir.

Step 7: Taste and adjust seasoning if needed.

Step 8: Garnish with crumbled feta cheese if desired.
