Better Than Take-out Spring Rolls

Ingredients:

  • Rice paper wrappers
  • 1 cup cooked and shredded chicken (or tofu for a vegetarian option)
  • 1 cup cooked vermicelli noodles, cooled
  • 1 cup shredded lettuce
  • 1 cup julienned carrots
  • 1 cucumber, thinly sliced
  • Fresh mint leaves and cilantro for added freshness
  • Hoisin sauce and peanut sauce for dipping

Steps:

Step 1: Prepare all the filling ingredients and have them ready for assembly.

Step 2: Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it becomes pliable but still slightly firm.

Step 3: Lay the damp rice paper on a clean surface.
