Vadouvan Sauce

Ingredients:

  • 2 tablespoons Vadouvan spice blend
  • 2 tablespoons olive oil
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 cup tomato puree
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

Step 1: In a saucepan, heat olive oil over medium heat.

Step 2: Add finely chopped shallots and sauté until softened.

Step 3: Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.

Step 4: Add Vadouvan spice blend to the pan and cook, stirring continuously, for another 2-3 minutes to toast the spices.

Step 5: Pour in tomato puree, stirring to combine with the spices.

Step 6: Lower the heat and simmer for 5-7 minutes, allowing the flavors to meld.

Step 7: Add coconut milk to the sauce, stirring until well incorporated.

Step 8: Season with salt and pepper to taste.

Step 9: Simmer the Vadouvan Sauce for an additional 5-7 minutes, allowing it to thicken slightly.

Step 10: Garnish with fresh cilantro if desired.
