Ingredients:

  1. 4-6 hard-boiled eggs, peeled
  2. 2 large onions, finely chopped
  3. 2 tomatoes, finely chopped
  4. 1 tbsp ginger-garlic paste
  5. 2 tbsp oil or ghee
  6. 1 tsp black mustard seeds
  7. 1 tsp cumin seeds
  8. 1 sprig curry leaves
  9. 2-3 green chilies, slit
  10. 1 tsp turmeric powder
  11. 2 tsp black pepper powder (adjust to taste)
  12. 1 tsp red chili powder (optional, for extra heat)
  13. 1 tsp cumin powder
  14. 1 tsp coriander powder
  15. Salt to taste
  16. Fresh coriander leaves for garnish

Steps:

Step 1: Sauté Onions and Tomatoes In a pan, heat oil or ghee. Add mustard seeds, cumin seeds, and curry leaves. Once they splutter, add finely chopped onions. Sauté until onions are golden brown. Add ginger-garlic paste and cook until the raw smell disappears. Add chopped tomatoes and cook until they become soft and the oil separates.

Step 2: Spice it Up Add turmeric powder, black pepper powder, red chili powder (if using), cumin powder, coriander powder, and salt. Mix well and cook the spices for a couple of minutes.

Step 3: Add Eggs Gently place the hard-boiled eggs into the masala, ensuring they are coated well with the spice mixture. Allow the eggs to absorb the flavors by simmering for a few minutes.

Step 4: Adjust Consistency Adjust the consistency of the masala by adding water if needed. Simmer until the gravy reaches your desired thickness.
