Almond Financier Cookies
Ingredients:
- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1 cup unsalted butter, melted and cooled
- 1 cup powdered sugar
- 4 large egg whites
- 1 teaspoon almond extract
- Pinch of salt
- Sliced almonds for garnish (optional)
Steps:
Step 1: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: In a bowl, whisk together almond flour, all-purpose flour, and a pinch of salt.
Step 3: In a separate bowl, beat the egg whites until frothy.
Step 4: Gradually add powdered sugar to the egg whites, continuing to beat until the mixture becomes smooth and slightly thick.
Step 5: Gently fold the melted butter into the egg white mixture.
Step 6: Add almond extract to the batter and fold in the almond flour mixture until just combined.
Step 7: Spoon the batter into small round molds or onto the prepared baking sheet.
Step 8: If desired, garnish the tops of the cookies with sliced almonds.
Step 9: Bake for 12-15 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Step 10: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
